OAT, HEMP, AND CHERRY ENERGY BITES

The Cancer Support Community’s annual Steps for Hope Walk event not only brings in the much needed funding to support their incredible mission of educating and supporting those who have cancer, and their families, but it also brings together friends, family, and supporters to create the strong community needed to gather the strength to continue their fight. After all, Community is Stronger than Cancer.

Above is the recipe for the energy bites available to the participants. I hope you make this, or a version of it, in your own kitchen. Yes! They can be frozen!

I have had the pleasure of working with CSC since 2011. This is also the year I started STL Veg Girl. I got off the plane from my Food for Life training in Washington DC and a few days later the then Executive Director invited me in and handed me a blank calendar and asked me to begin teaching nutrition classes to members of their community.

I lost my dad to cancer in 2008 and exactly ten weeks later I, too, was diagnosed. Recalling this full-circle moment of being asked to educate members of CSC about a plant-based diet still gives me chills. I have never been more honored, and I have never taken a job so seriously- interestingly enough, I have never had more fun.
