If you’ve slept through brunch and need something satisfying while watching the games—or maybe you’re already thinking about that New Year’s resolution you’re totally capable of keeping (and we’re here to help with that)—we’ve got you covered! Here are a couple of easy, batch-cook recipes to keep you fueled all week. Eating better doesn’t have to be complicated, and no, you don’t have to spend hours in the kitchen every single day. Let’s make this simple and delicious!

Blackeye Pea, Mushroom and Cauliflower New Year Bowl: a New Year’s Day staple
Jalapeño Black-Eyed Pea Burger: A brand new 2025 recipe for you!
Ingredients:
1 1/2 cups cooked black-eyed peas (or one 15 oz can, drained and rinsed)
1 small ripe avocado
1/2 cup finely diced onion
2 jalapeños, finely diced (remove membranes and seeds to lower the heat)
1/4 cup fresh parsley or cilantro, chopped
1/4 cup oat flour (or more if needed for binding)
1 flax egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water, let sit 3 minutes)
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon cumin
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper
Juice of one lime
Whole-grain buns or lettuce wraps for serving
Optional toppings: avocado slices, tomato, lettuce, or vegan mayo
Directions:
Heat a skillet over medium heat. Sauté the onion and jalapeño for 3-4 minutes, until softened and fragrant. Add a few drops of water for veg broth if it begins to stick. Remove from heat and let cool slightly. Next, mash the black-eyed peas and avocado together in a large mixing bowl, leaving some chunks for texture.
Add the sautéed onion and jalapeño, parsley or cilantro, oat flour, flax egg, lime juice, and spices (smoked paprika, garlic powder, cumin, salt, and pepper). Mix until everything is well combined. Add more oat flour if the mixture feels too wet. Place the mixture in the fridge and allow to chill for at least one hour.
Form the mixture into 4-6 patties and get cooking!
Stove Top Instructions
Heat a non-stick skillet over medium heat (you can line the pan with parchment paper for easier cleanup). Cook the patties for 4-5 minutes on each side, until golden brown and firm.
Oven Instructions
Preheat the oven to 375°F. Place the patties on a parchment-lined baking sheet. Bake for 20 minutes, flipping halfway through, until lightly crisp on the outside.
