Barbara’s Pimento Cheese
Ingredients
• 8 oz chickpea cheese (easy American cheese), grated
• 1 bunch green onions, including green parts, chopped medium-fine
• 2 cloves garlic, minced fine by Bobby
• 1 4-oz jar chopped pimientos, drained (reserve and add a small amount of juice if desired)
• [2 T Treeline scallion flavor cheese]
• 1 T pickle juice — I used bread and butter pickle juice and it was good
• 2 big T nutritional yeast
• Tofu mayo, enough to reach desired consistency (http://stlveggirl.com/recipes/creamy-tofu-mayo/)
• Maybe a pinch or two of paprika — yes!
• salt and white pepper to taste (use a very light hand with the salt or omit entirely)
Directions
Make sure the chickpea cheese is REALLY cold; weigh out 8 ounces and put it in the freezer for
about half an hour. You can use the food processor to grate it, although it does give a coarse grate.
Add all ingredients through tofu mayo to bowl and mix. Add pickle juice and taste, add other
seasonings and taste and adjust.
Refrigerate for several hours to allow flavors to meld for best taste, but it’s really good
immediately, too!
